A rare and unforgettable culinary event is on the horizon. A giant bluefin tuna—caught locally—will be delivered dockside by a working trawler and hoisted from the boat beside Mystic and onto the wharf. Guests will toast its arrival with champagne before settling in to witness its transformation: broken down and prepared by our chefs in real time, then served one course at a time.

A working trawler glides toward Mystic’s waterfront, bearing a single, monumental catch: a local, sustainably harvested bluefin tuna. As the vessel ties up just beyond the wharf, guests gather with glasses raised.
The fish is hoisted from the deck—gleaming, immense. There is no curtain, no back-of-house. Chefs begin the breakdown in full view: knives flash, sinew parts, the ritual unfolds.
Inside, the meal unfolds in real time. Each course—raw, cured, smoked, grilled, and braised—is built from the fish before your eyes. Steam rises, flesh sears, fat melts onto flame. There is no distance between the catch and the plate.
This is a deeply elemental encounter with a single creature and the sea that gave it. It is not a polite dinner. It is visceral, salt-stung, and entirely alive.
