Beltane - Welcomed by fire:

with 'the macallan'

Beltane is one of the great Gaelic fire festivals — a celebration marking the beginning of summer across Scotland. Historically, bonfires were lit across the Highlands, hearths were extinguished and rekindled, and communities gathered to mark renewal through flame. On May 5, Mystic honours this tradition with a Beltane Scotch Dinner in partnership with The Macallan.

Guests are welcomed by fire on arrival. Throughout the evening, flame shapes the menu — culminating in a featured Fire Course finished in heat and ember.

Each course is paired with a Macallan expression selected to reflect the depth, character, and warmth that define both the distillery’s mastery and the spirit of Beltane. From the meticulous selection of oak through extended maturation in sherry-seasoned casks, The Macallan’s reverence for time and craft mirrors the elemental power of fire itself.

An evening of Scotch, season, and ceremony rooted in Gaelic tradition and interpreted through Mystic’s coastal lens.

Winemaker Dinner:

with 'Isole e Olena'

Halfway between Florence and Siena, Isole e Olena rises from the hills of Chianti Classico — 56 hectares of vineyards shaped by clay schist, alberese stone, sandstone soils, and cooling sea breezes.

Since 1976, Paolo De Marchi has pursued a singular vision: elevate Sangiovese through selection, restraint, and deep respect for terroir. With Cepparello, he redefined what Chianti Classico could be, choosing purity over convention.

On May 20, Mystic welcomes Isole e Olena for an intimate winemaker dinner where each course is informed by the wines themselves. The menu will be revealed by the bottles, allowing the character of Sangiovese and Tuscan soil to guide the progression of the evening.

A dialogue between Tuscany’s hills and Nova Scotia’s coast — two regions shaped by climate, stone, and time.

A Reckoning with the sea

A trawler glides toward Mystic’s waterfront, bearing its catch from the cold Atlantic — perhaps swordfish, halibut, or bluefin — each one chosen for its season, its story, its sheer presence. As the vessel ties up just beyond the
wharf, guests gather with glasses raised.

The fish is hoisted from the deck—gleaming, immense. There is no curtain, no back-of-house. Chefs begin the breakdown in full view: knives flash, sinew parts, the ritual unfolds.

Inside, the meal unfolds in real time. Each course raw, cured, smoked, grilled, and braised, built from the fish before your eyes. Steam rises, flesh sears, fat melts onto flame. There is no distance between the catch and the plate.

This is a deeply elemental encounter with a single creature and the sea that gave it. It is not a polite dinner. It is visceral, salt-stung, and entirely alive.

THe Unwritten bar program

For those seeking a shorter, more focused moment, The Unwritten Bar Program offers something quietly radical — a guided tasting of two bespoke cocktails, each paired with a chef-curated course.

With a limited number of seats available each evening, this intimate experience is offered exclusively at our bar seats. Guests are invited to select Bar when reserving to
access this option.

As each cocktail is prepared before you, guests are taken through the flavours, elements, and stories that inspired them — an exploration of craft, technique, and the dialogue between bar and kitchen. Each tasting is complemented by a dish drawn from our Fauna or Biota menus, creating a singular, immersive moment found nowhere else in the room.

The Long Pour

An evening where the glass sets the course.

The Long Pour is a continuing series of wine and cocktail dinners, each exploring the dialogue between glass and plate. Whether guided by Sommelier Sam Melanson through rare and remarkable wines, or led by Head Bartender Danielle King through inventive, story-driven cocktails, every iteration is a one-night-only experience shaped by what’s poured.

Each event begins with the featured selections — wines or spirits chosen for their character, depth, and sense of place. The menu that follows is revealed course by course as the evening unfolds. Together, our beverage and culinary teams craft a sequence where flavour, texture, and temperature that move in harmony balancing between technique and intuition.

No two evenings are the same. In every glass lies a new story waiting to be told.

A study in...

An evening of inquiry and interaction.

The Study In series invites guests to explore the techniques and ideas that shape Mystic’s kitchen, from fermentation and foraging to explorations of local honey, seaweed, or roots. Each dinner begins with a theme or partnership and unfolds as a hands-on exploration of process and flavour.

Guests are invited not just to dine, but to take part in the dialogue: to taste, to ask, to see how the smallest decisions transform an ingredient. Each course builds on the last,  revealing the craft and curiosity at the heart of our cooking.
